OK, the title is overly assertive. I’ve never reacted to a recipe with “Liar, liar, pants on fire.” But recipes often, for varying reasons, misinform.

Recipes Lie!

Granted, recipes don’t “lie” per se. But they can mislead in ways that surprise you. That celebrity chef may not have actually written the recipes in the book. Measurements may be vague or inaccurate. Time estimations may be off. There may be omission, not mentioning a detail that is important or not explaining why something is done. Recipes inhibit people, especially those without kitchen experience. Even with with a well-constructed recipe, circumstances may require substitutions, that many are afraid to try. I have a lot to say about recipes. I expect to write several posts, and I’d like to tag them, so they can be searched or organized in an archive. The best, concise tag that I could think of was Recipes Lie! More to come…
