On the third week of the season, my CSA gave to me:
- Red Scallions
- Orange Carrots
- Radishes with their tops
- 2 Little Gem Lettuce Heads
- Asian Greens Salad Mix
Look at those red scallions! I’m all about pigments in vegetables. Not just because they are pretty. Pigments mean phytonutrients. Eat the rainbow! Those are going on the hot grill tomorrow! Salt, pepper and olive oil. Simple, delicious.
The scallions will be part of a grilled dinner tomorrow, so what am I making tonight? I’m going to experiment a bit, using the radishes (with their greens, of course) and the Asian greens to make a riff on caldo verde. Click here to read more about that!
