With tomato season in full swing, sticking with the famers’ choice on all options on this week’s CSA delivery, we got a double dose of heirloom tomatoes. Two full pounds. Rounding out the delivery are other summer standards: cucumbers, summer squash and eggplant. It’s almost time for some ratatouille! The only thing that isn’t a fit are the cucumbers and the only thing missing are some sweet red peppers. Alas, sweet red peppers are the last of the summer standards to show up in the garden and farmers’ markets. But it won’t be too long.
The eggplant are a variety known as fairy tale eggplant. Definitely the cutest variety out there. Uniformly small, three to four inches, and bright purple with streaks of cream.
I’m finalizing a recipe where the traditional Southern tomato pie meets the French galette. It’s a great way to use a large amount of tomatoes and certainly to celebrate tomato season. I’ll post the recipe soon.
