Who says you need lettuce to make a salad? A super simple, super flavorful spring salad pairing sugar snap peas with radishes, mint and feta.

In the spirit of Sam Sifton style No-Recipe Recipes, here’s a recipe for a sugar snap pea and radish salad.

What you’ll need:

  • A pint of sugar snap peas
  • A bunch of radishes
  • Mint
  • Feta
  • Your favorite vinaigrette

How to bring it together:

Separate the radishes from their greens, saving the greens to be cooked in another dish. Clean up the radishes and slice them into thin rounds. Remove the string from the snap pea pods by pulling from the stem end, and slice them diagonally into 2-4 pieces each (depending on the size of each pod). Stack a dozen large mint leaves and slice them into a “fat julienne.” Toss all of these with your favorite vinaigrette (a lemon based one is great, but any vinegar based will work as well). Plate and sprinkle feta crumbles on top (chèvre is also a great option). That’s it! Enjoy!
