Garlic Scape Pesto
A twist on the classic basil pesto featuring garlic scapes.

- 8-10 garlic scapes
- ¼ cup nuts (pecans, pistachios, pine nuts...)
- 1 ounce aged, hard grating cheese by weight
- ¼ cup extra virgin olive oil
- ½ tsp salt
Either grate the Parmigiano Reggiano, or use a knife to dice into small pieces.
Chop the garlic scapes into 1" pieces.
Combine all ingredients in the food processor and pulse until the desired consistency.
